So, who doesn’t love some spicy shredded chicken tacos? These are surprisingly low calorie and so so delicious.

There are two ways to cook the chicken, both ways don’t require any oil or butter and the chicken shreds so well! To be honest though, slow cooker wins hands down.

Method 1: Slow Cooker

  • Place 2-4 trimmed chicken breasts into slow cooker
  • Add 1/2 cup low-sodium chicken broth
  • Add Cumin, Chili Powder, and Ground Pepper on chicken
  • Cook on high for 2-3 hours until chicken is cooked through

Notes:

  • You can substitute any seasonings to just create any flavor of shredded chicken you want.
  • You can also cook this on low for 6-7 hours if you have the time!

Method 2: Instant Pot

  • Place 2-4 trimmed chicken breasts into Instant Pot
  • Add 1/4 cup low-sodium chicken broth
  • Add Cumin, Chili Powder, and Ground Pepper on chicken
  • Cook on Poultry setting for 11-12 minutes

Notes:

  • This method is not as tender as the slow cooker, so I only do this if I don’t have time to slow cook.
