Diabetic Friendly Recipes

Hi all,

My son is a Type 1 Diabetic. He does best on a certain amount of carbs per meal, so I’m going to post those things here. Also, some carbs are better for blood sugar than others, so I’m going to try to incorporate more of those into his meals. This is in no way a restriction of carbs, and you should follow your doctor and dietitian’s orders when it comes to your specific plan.

Breakfast

2 Eggs & Apple Pie Oats: 20 Carbs

  • 1/2 Cup Cooked Oatmeal
  • 2 Tbsp Whole Milk
  • 3 Tbsp Unsweetened Applesauce
  • 1-2 tsp Cinnamon (optional)

Lunch

Leftover Stir Fry: 19g Carbs

  • 1/4 Baked Chicken Breast (with Rotisserie Seasoning)
  • 1/4 Avocado
  • 1/4 Cup Chopped up Green Beans
  • 1/3 Cup Cauliflower Rice
  • 2 Tbsp Brown Rice (Calculated when dry)

Tuna Flatbread: 16.5g (half) or 33g (whole)

  • 1/2 Can Very Low Sodium Albacore Tuna in Water
  • 2 Celery Stalks cut in thin slices
  • Mayonnaise to taste
  • Flatbread (recipe here)
    • Carb counts based on half of a piece of flatbread or a whole piece, recipe makes 8 pieces.
